Happy Cinco de Mayo everyone!
Or, as mycoworker friend Victoria called it today, "Cinco de Drinko." XD
Welp, today we had my and
rathershady's goodbye party at the W.C. All of us were there except for
courters28, who had to leave for Springfield today. (Hopefully she'll be back up for the graduation party on Saturday, but it's looking like not because her car is messing up.) It was a nice party - yet another ginormous Costco cake, and we sat around and chatted. I got a book about feminist authors as my going-away present (Vinnie got one about feminist philosophy) and several funny cards. And the chair of the W.C. board, Jarene Stanford, gave both of us really nice "class of 2005" keychains (layered with 18K gold!).
I'm kind of sad...it's hard to deal with ending a whole bunch of things and then having to wait three months before starting something else. I just feel at loose ends now. Also, I'm tired of making really good friends and then having to leave them (as in leave TOWN leave them) within a year or so. At least I'll be up in Iowa for the foreseeable future, so I won't have to worry about having to leave any friends I make there any time soon.
It didn't help my melancholy mood that we went to Jake Edward's Barbecue for supper, seeing as how it's taken over the spot of the now-defunct Torre's Pizzeria (which was my favorite restaurant for YEARS AND YEARS). Sitting in that oh-so-familiar spot, with everything inside changed and Western instead of Italian and all that, made me realize just how much I missed Torre's in the good ol' days. :(
Pretty soon I'm going to be as bad as my stepdad, pointing out dead restaurants every time I pass one.)
..Anyway! As promised, here is Cooking Photojournalism for the wonderful little lemon sandwich cookies I made for my stepdad's party! The recipe is from Betty Crocker's Cooky Book - and not the $14.95 replica version they've just released, but the 1963 original complete with its shiny gold $1.95 price sticker.
A rich, fancy cooky put together with a lemon filling. Perfect for teas, receptions, and parties.
1 cup butter or margarine
1/2 cup sifted confectioners' sugar
1 tsp. lemon extract
2 cups Gold Medal Flour
1/4 tsp. salt
Lemon Butter Filling (below)
Heat oven to 400 degrees (mod. hot). Cream butter and sugar. Measure flour by dipping method or by sifting. Add lemon extract, flour, and salt; mix well. Measure level teaspoonfuls of dough; round into balls and flatten slightly. Place about 1" apart on ungreased baking sheet. Bake 8 to 10 min., or until very lightly browned. Cool. Put together with Filling. Roll in confectioner's sugar. Makes about 5 doz. double cookies.
Note: If you use Gold Medal Self-Rising Flour, omit salt.
Lemon Butter Filling: Blend 1 egg, slightly beaten; grated rind of 1 lemon; 2/3 cup sugar; 3 tbsp. lemon juice; and 1 1/2 tbsp. softened butter in top of double boiler. Cook over hot water until thick, stirring constantly. Set aside to cool.
OK, now my notes:
- I know that a level measuring teaspoon-sized amount of dough sounds and looks awfully small for a cookie, and seems (especially with this dough) like it should fall apart immediately. Still, do what the recipe says - I did about two-teaspoonful-sized balls, and while they turned out fine they were thicker than they should have been and I got only half as many as they said, leaving me with half the filling left over.
- It has a very dry, crumby dough that makes the cookie bits nice and shortbread-y. It goes quite well with the zesty lemon filling.
...that's pretty much it, this recipe is very straightforward. (And damn tasty - the lemon zest makes them quite flavorful.)
